Some uses of pineapple:
Fights cancer: Pineapples are rich in polyphenols, plant compounds that act as antioxidants and protect cells from oxidative stress and cancer.
Memory Booster: Pineapples provide vitamin B6 and glutamic acid, essential for pregnant women. They help stimulate the brain, improving memory and concentration.
Aids digestion: Pineapples contain enzymes and fiber that aid in protein digestion and support a healthy gut. They can also help prevent or treat digestive issues like constipation, diarrhea, and urinary tract infections.
Heart Protector: Pineapples contain vitamins A and E, which help prevent cardiovascular diseases. They also have vitamin B6, which reduces homocysteine, an amino acid that damages blood vessels.
Lowers Cholesterol: Pineapples have vitamin C and pectin, which can decrease the levels of bad LDL cholesterol in the blood.
Production process:
Step 1: Pineapple Selection and Preparation: Begin by selecting ripe, high-quality pineapples, thoroughly washing them to remove any surface dirt or impurities.
Step 2: Peeling and Slicing: Use a stainless-steel peeler to remove the peel and slice the pineapple into uniform pieces, approximately 1 cm thick, to ensure consistent drying.
Step 3: Sugar Addition: Enhance the sweetness and texture of the pineapple by adding 5% dry white sugar by weight to the slices.
Step 4: Steam Treatment: Place the pineapple slices on a steam conveyor belt, set to 65°C–70°C, and delicately spray with hot water infused with sodium metabisulfite for 5 minutes to ensure preservation.
Step 5: Drying Process: Arrange the pineapple slices on trays lined with cheesecloth and dry them at a controlled temperature of 60°C–65°C to thoroughly dehydrate while maintaining the natural qualities of the fruit.
Step 6: Packaging and Sealing: Once dried, pack the slices in plastic bags and seal them to protect against moisture and contamination, ensuring freshness and longer shelf life. Store the packaged product in a cool, dry environment (18°C–22°C).
